Aperol Spritz Jell-O Shots

Ingredients
4 small oranges
One 3-ounce box orange flavored Jell-O
1/2 cup Aperol
1/2 cup Prosecco or sparkling white wine
Directions
Place a fine-mesh sieve over a medium bowl or liquid measuring cup. Halve the oranges crosswise through the equator. Use a spoon to scoop the orange pulp from the middle of each half into the sieve. Reserve the orange shells (cups), taking care not to puncture or break them. Place them in a 9-by-13-inch baking dish. If the oranges don’t stand upright, slice a very thin piece off the bottom so they sit straight without wobbling, being sure to not cut through the shell or the gelatin mixture will seep out.
Squeeze or press the orange pulp in the sieve until you have 1 cup juice. (If you don’t have enough juice, top with enough water to equal 1 cup.) Discard the pulp. Transfer the juice to a small saucepan and bring to a simmer over medium-high heat.
Add the Jello-O to a large bowl, then stir in the warm orange juice. Continue stirring until the gelatin has dissolved completely, about 2 minutes. Stir in the Aperol and sparkling wine until well combined. Let sit for 5 minutes so any bubbles can dissipate.
Carefully pour the gelatin mixture into the orange cups. Refrigerate until set, about 4 hours and up to overnight.
To serve, remove the orange cups from the refrigerator and cut each into 4 wedges.
